Gluten Free!!!

This is a copy of an email we received from Tammy P. Thanks Tammy, for letting us share this with everyone.

"I just adapted your recipe to make it gluten free for my son. I used a rice flour blend in addition to the xanthan gum. The bread turned out FABULOUS!!!! When it came out of the oven, we sliced it up and put some butter on it. I almost started to cry because for the first time in 2 1/2 years since my son's celiac disease diagnosis, I have found a delicious, easy to make bread. Thank you, Thank you, Thank you for your recipe. I was fortunate to watch you ladies make bread at an Enrichment evening and as I sat there I thought to myself...why am I here? I can't even use this recipe at home because of my son's disease. But incorporating the gluten-free flour has made the bread just as delicious!!!So, again Thank you. I hope that others who need to eat gluten-free will try the recipe with the rice flour blend. It freaked me out at first because I wasn't sure it would work out. But, all of my kids love the bread - not just my son who has to eat gluten-free. If you have others who ask questions about the GF recipe - all I did was make a blend of 6 cups brown rice flour (white rice works too), 2 cups potato starch, 2 cups tapioca starch (flour). I have a kitchen aid so I cut your recipe in half so it would fit. Then I added the 1tsp of xanthan gum per 1 cup flour and everything else was the same. Thanks again for your recipe - we love it! It's been a long time since we've had bread in the house because it was hard to find one we all liked. So again, thank you.-Tammy"
